☆Happy Independence Day!☆

You wont’ get much more all-American than enjoying watermelon on the 4th of July. Here’s an easy twist on watermelon salad that I love. By using a little spice to balance the cold nature of the melon, your body will more easily respond to the energetics of this food and use it to cool down & hydrate. It’s a perfect mix for these hot summer days. Have a wonderful holiday! 

Festive Watermelon Salad:

3 C seedless watermelon, cut into 1" cubes

1 large lime, juiced

2 pinches cayenne pepper (or use red chili flakes instead)

¼ C fresh mint or basil, chopped

freshly ground black pepper

Place watermelon cubes in serving bowl. Mix lime juice with cayenne and toss mixture with watermelon. Fold in mint or basil leaves, grind some pepper on top, sprinkle more cayenne and serve. *For a more filling salad, add a drizzle of good olive oil or a handful of crumbled feta or cotija cheese!
