Hey everyone! It’s been bonkers over here lately. My boys have been home back to back with school bugs. I haven’t had much free time. My brain is fuzzy. When I have weeks like this I try to plan meals I know I don’t have to think about at ALL. No recipe, no “cooking” even really - just piling things onto a sheet pan and sliding it in the oven. I do a version of this very often, maybe too often? 😏But it’s easy, healthy, colorfully happy, and everyone likes something. Tonight’s sheet pan here / basic dill and lemon salmon, cauliflower with turmeric + cinnamon (plus some naked for my pickiest) and okra, rainbow carrots, squash in za’atar spices all mixed with avocado oil and salt. I WILL exert a few minutes more effort and make some rice :) And whether I make black, brown or white rice - I always share a pour of whole coconut milk over it for the boys. And maybe for me too. 😋 Please, please share with me your go-to easy, healthy dinners you rely on when you’re too tired to think anymore - some new ideas from you all would be 🙌! And yes, I do embrace take-out as an option. 😂
