I know there are many women in this world who don’t have an inspiring or loving mother in their life. I’m not one of those people. I’m lucky enough to have a mom who I adore and who spreads so much love and joy and generosity to our whole family. I don’t take her for granted for one second. She also makes a killer homemade, grain-free granola! She says it’s based on one from @paleomagazine but all you need to know is that it’s scrumptious.

•Mom’s Granola•
1 C each raw walnuts & almonds, pulsed a few times in food processor to loosely chop. Add those in a bowl with ¼ C raw pepitas. Melt ¼ C coconut oil with scant ¼ C maple syrup + 1 tsp vanilla extract. Pour over nut mixture then add 2 tsp cinnamon, ¼ tsp sea salt. Mix well and spread onto a sheet pan and bake at 325 for 20 min. Stir and cook for 10 min more. Add ½ C unsweetened coconut flakes and bake again for 10 min. Remove from oven and add in ½ C dried blueberries or cranberries. Mix, cool and store. ** Medicine Kitchen note: Add in 2 tsp Maca root powder with the cinnamon for kidney and Yang Qi nourishment **
